Baingan, Indians have mixed feelings associated with this vegetable, specially Bhramins and people following Jainism. Baingan (Brinjal) is one of the vegetables which is not considered to be a great food for the monsoon. The scriptures say that Baingan is an impure food item. That is why people who observe fast during the month of Kartik and Shravan do not eat baingan (Baingan Ka Bharta).

Scientifically, Baingan is usually infested with lot of insects and that is why it is not safe for us to eat it during Shravan or monsoon season.

My grandmaa is such a hard core Brahmin, I tell you, we can not even touch the spoon of Baingan Bhaji to her food or else she she will not eat it. Honestly, I gave-upon making her understand that the reason is not mythological but scientific. And all we need to do is to take care that we are not eating the poor insects.

All Ingredients We Need to Make Baingan Ka Bharta (Eggplant)

Ingredients of Baingan Ka Bharta | Brinjal Bharta | Eggplant - Special Recipe - Dil Bhukkad

  1. Baingan- 1 (Large Size)
  2. Onion- 1 piece (Medium Size. Sliced)
  3. Tomato- 1 piece (Medium Size. Sliced)
  4. Green Chilli- 6-7 (Crushed) pieces
  5. Garlic- 8-10 (crushed) pieces
  6. Green Peas- 3-4 tea spoon (Crushed)
  7. Jeera- 0.5 (1/2) tea spoon
  8. Rai- 0.5 (1/2) tea spoon
  9. Red Chilli Powder- 1 tea spoon
  10. Haldi Powder- 0.25 (1/4) tea spoon
  11. Hing- a pinch
  12. Salt- as per taste
  13. Desi Ghee- 1 tea spoon
  14. Charcoal- 1 Piece

Crushed Garlic, Green Peas and Green Chilli need to used. Please do not make a proper Paste.

This quantity is enough for preparing Baingan Ka Bharta for 2-3 People. You can vary the ingredients as per your requirement. Also, Adding 6-7 green chillies gives it a spicy taste, Bharta is even more tempting when it is spicy. But you can still increase or decrease any of the ingredient or spices as per your requirement. Complete Step by Step Process to Make Baingan Ka Bharta (Eggplant)

  1. Roast the Baingan after applying oil to its skin;
  2. Peal-off the top layer (skin of bangan);
  3. Crush the roasted bangan as finely as you can and keep it aside;
  4. Heat Some Oil in the Pan;
  5. Add Jeera and Rai Seeds to it;
  6. After frying the above, add heeng powder to it.
  7. Add sliced onion and garlic to it;.
  8. Fry it for half a minute;
  9. Add the crushed green chillies, Tomato and Green Peas
  10. Add Haldi Powder, Salt and stir well;
  11. Fry it for half a minute;
  12. Add Red Chilli Powder and mix well;
  13. Add crushed Baingan to the fried masala;
  14. Cover the Pan and fry for 1-2 minutes;
  15. Turn the flame off;
  16. Heat the charcoal on the burner till it ignites and turns red hot;
  17. Place the same in the centre of the prepared bharta;
  18. Pour a spoon of Ghee onto the charcoal;
  19. Immediately cover the pan with lid.
  20. Uncover the Lid after 2 minutes, remove the charcoal and stir the prepared bharta.
  21. Our Baingan ka bharta is perfectly ready to be served.
