Rajasthani Dahi or Chach ki Rabdi is a regular serve in every house hold of the rural areas of Rajasthan. Rabdi is a beverage that is made by using Dahi (curd) or Chach (Buttermilk) and Bajra or Barley (जौ) flour.
Dahi Ki Rabdi is an year round beverage for the Rajasthan region. It is served HOT with your regular dinner during winters ancestors said “you will have a good sleep after drinking warm Dahi ki Rabdi During Night” and;
In Summers they serve it with curd, in the next morning with a little Jeera Powder and Salt, it is none less then a regular Energy Drink.
They believe that you don’t need Breakfast after you consume one glass of Dahi-Rabdi combination.
I must tell you that One really feel sleepy after having Rabdi. So, if you want to have a good sleep, then Dahi ki Rabdi is absolutely the right drink for you, but don’t ever have it in Breakfast while going to office, else, your boss may fire you for sleeping in the working hours. 😛 😛
Dahi Ki Rabdi is offered as a main Prashad to the Godess “Sheetla Mata” at the time of Sheetla Saptmi- a festival which is celebrated after Seven Days of Holi.

The Bajra Flour, used as an ingredient is rich in essential components like-
- Protein;
- Fibre;
- Magnisium;
- Phosphorous;
- Iron;
Curd Used as an ingredient is rich in
- Vitamin C;
- Carbohydrates and
- Proteins.
Health Benefits Of Rajasthani Dahi or Chach Ki Rabdi
- It has a cooling effect on the Digestive Tract;
- Presence of Buttermilk or Dahi provides Calcium without Fats;
- Helps in wash down Oily Food;
- It encourages Digestion;
- It helps in boosting the Immune System.
- Bajra is high in fibre, so it takes long time to move from Stomach to intestine, so it curbs hunger for long time and thus helps in weight reduction.

All Ingredients We Need to Make Rajasthani Dahi or Chach ki Rabdi
- Dahi- 1 Bowl (approximately 400-500 grams)
- Bajra Flour- 0.25 (1/4) Bowl (Approximately 150-200 grams)
- Salt- as per taste
Preparation time- 20-25 minutes
Complete Step by Step Process to Make Rajasthani Dahi or Chach ki Rabdi
- Add almost 1 glass of water into the curd and make it a liquid Chach using a mixing equipment (Rai) alternatively you can use Buttermilk or Chach
- Take half of the Chach in a separate Bowl and mix the Bajra Flour into it, you can add bajra flour directly to the complete quantity of chach as well, all we need is to take care that no Bajra Flour Balls are left unmixed into the Chach;
- Put the mixture into a pan and add salt to it;
- Stir the Rabdi Continuously till bubbles start coming.
- Add required water to the Rabdi as it turns thick;
- Now, cook it for approximately 15-18 minutes on low flame, stir occasionally.
We are perfectly ready with the Rajasthani Chach or Dahi ki Rabdi. Serve it HOT!!!
Try this with your regular Dinner or as a Dahi- Rabdi Mixture for the next morning Breakfast (Just add a little Bhuna-jeera Powder and Salt to it)
