We Rajasthanies have very different taste and absolutely different vision about the Indian Dishes. We always add a flavor to things which no body even thinks of. Rajasthani Kadhi is one of this Kind Indian Dish. While Gujaraties like their Kadhi a bit sweet, Rajasthani Kadhi is a Bit Khatti (Sour) in taste.
Whenever my mom use to order in the morning… Dahi(Curd) ko Fridge se bahar nikaal kr rakh do!!!!
and it becomes quite clear… we gonna have Kadhi in the Dinner. 🙂
You know… there was a logic behind keeping the curd out of the fridge in the morning. As it will turn the curd a bit Khatta(Sour) by the evening, which gives the Kadhi its real taste- The Rajasthani style Kadhi!!! Unique Cooking skills of Indians. Unique Flavors and absolutely a foodie’s delight.
When I was away from Mommy for my job and use to return home ones in a month or two just for 3-4 days, I use to have my own wish list for food. And Kadhi is definitely at the top.
It is simply the curd which is thickened using gram flour but it has its own taste I tell you…. and its definitely amazing. if you compare any Cheesy Dish say Cheesy Sweet Corns (recipe) with Rajasthani Kadhi…. its like Comparing the North and the South Poles of Earth. Absolutely Different. But both have their own importance, their own taste and both are unique in itself. Also, time , mood and company etc. affects your choice of food.
My PG days have their own stories most of them are really interesting but I really had tough time with food those days. The cook in my PG doesn’t really cook good… or I should say… her cooking skills was horrible. In that case I have only one Life saver… The Colony opposite to my PG have their own mess. And for outsiders they use to charge.
But the Kadhi they serve, oh! that use to be just awesome. That was a life savior for me.
I really Don’t have an idea what are the Nutritional Contents of Kadhi but I can assure you it have an awesome taste. For me… this reason is absolutely enough to try it.
Nutrition Content of Rajasthani Kadhi
It is a mixture of two main ingredients-
The first one is Curd. It is a great source of Calcium and Vitamin D.
The other One is Gram Flour(Besan) –
It is Rich in…

- Magniseum;
- Zinc;
- Manganese;
- Iron;
- Potassium; and
- Copper.
Both the ingredients of this Indian Regional Recipe are very Healthy in Nature and fulfills our body’s need of various Nutrients.

Jokes apart, this Indian Dish is really healthy because of its Healthy Ingredients-
- The Curd helps to improves Digestion and good for teeth and bones;
- Curd and the Gram Flour both are good for your heart;
- Curd helps in managing the Normal Blood Pressure;
- Gram Flour helps in controlling Diabetes;
- Dahi or Curd also makes the Skeleton System Strong;
and the list goes on.
All Ingredients We Need to Make Rajasthani Kadhi (Curry)
- Curd- 1 Bowl;
- Gram Flour- 2 Large spoon;
- Green Chilli- 2 (finely Chopped);
- Onion- 1 Medium Size (finely Chopped);
- Meetha Neem- 7-8 leaves
- Pudina leaves- 5-7 leaves
- Salt- as per taste
- Haldi Powder- 0.5 (1/2) tea spoon;
- Red chilli Powder- 1 tea spoon;
- Methi Seeds- 0.5 (1/2) tea spoon;
- Rai/ Mustard Seeds- 0.5 (1/2) tea spoon;
- Heeng Powder- 0.25 (1/4) tea spoon;
This quantity is enough for preparing Rajasthani Kadhi (Curry) for 2-3 People. You can vary the ingredients as per your requirement. You can also increase or decrease any of the ingredient or spices as per your requirement. After-all its your Mood and absolutely your food!!
Preparation time- 5 minutes
Cooking time- 25 minutes
Complete Step by Step Process to Make Rajasthani Kadhi
- Take some Curd in a separate bowl and Mix the Gram flour well with the curd to make it an even paste, make sure you are left with no flour balls into the curd;
- Heat Some oil in a pan and add half of the Rai seeds to it;
- Put the mixture prepared at step 1 and the remaining curd into the pan and stir;
- Add Haldi Powder, Salt and Red chilli Powder to the kadhi/ Curry;
- Keep stirring it continously;
- You can Add water to the curry, deciding the thickness of kadhi as per your preference (we have added 1/2 bowl of water;
- Boil the Kadhi (Curry) till bubbles start coming;Now you can leave it on Sim Flame to get cooked;
- Prepare Tadka –
1. Heat some oil in the pan;
2. Add Rai seeds, Heeng powdr, Meetha neem/ Curry Patta and sabut methi seeds to it.
3. Add Onion and Green Chilli to it and fry for 1 minute;
4. Add the tadka to the Kadhi; Also add Pudina leaves to it;
5. Let the Kadhi boil for 15-20 minutes.
- Prepare Tadka –
They say…. the more you cook it, the more tasty it turns!!!
The kadhi is absolutely ready to be served. Serve it HOT!!! With Rice or Chapati.
